A life-long dream of the acclaimed restaurateurs behind Brix and Criollo Latin Kitchen (Flagstaff) and Proper (Tucson), Proper Meats + Provisions is a one-of-a-kind community butcher shop and neighborhood eatery that showcases the Grand Canyon State’s finest farm- raised meats, poultry and cured products.
Our 1900’s historic 1,600-square-foot neighborhood store, butchery and 10-seat eatery offer home cooks, diners and chefs an abundance of fresh, artisanal meats and charcuterie sourced sustainably from local farms, while offering Arizonans a wholesome perspective on the craft – and art – of whole-animal butchery.
As the first exclusively local, whole animal butcher shop in Arizona, Proper Meats + Provisions is a return to the artfulness of butchery, offering specialty cuts of meats and carefully curated products not commonly found on big-box grocery store shelves (although we’ll stock the common cuts, too). All of the meats we offer are humanely and sustainably raised, and can be traced directly back to the source in a throwback to the days when farmers and purveyors monitored every step in the farm-to-table process.
While offering the highest quality of humanely and sustainably raised meats is at the very heart of what we do here at Proper Meats + Provisions, our offerings of fresh, local fare extend far beyond the butcher block to include local cheeses, small plates, fresh-baked breads, house-made soups, sandwiches, as well as a curated menu of craft beers and Arizona wines.
